Sicilian Schiacciata (kind of bread)
Makes 4 servings
Ingredients:
-1 Kg of flour -50 gr. of yeast -1/2 glass of lukewarm water -1 spoon of
bicarbonate -oil –salt.
To
make the filling:
-1 kg of tomatoes -2 onions –100 gr. of grated parmesan cheese -chilli pepper
-salt -oil of best-quality.
Directions:
Melt the yeast in lukewarm water with salt and add the flour. Work adding little
water, so that the paste, until hard and assumes the shape of a small cake. Dip
in the flour and wrap in a sheet to leaven for an hour. Add the oil and some
spoon of bicarbonate and work again. Roll out the paste into two layers.
Seasoning
with tomato, onion, chilli pepper and parmesan cheese: brown in a frying pan with little oil the onion
cut thinly and the tomato skinless and seedless. Add the grated parmesan cheese,
the chopped chilli pepper and a few of salt. Pour on the layers and roll up like
a strudel. Close the edges and grease. Bake in a preheated oven for 1/2 hour.
