Spaghetti with Sea-urchin

Makes 4 servings

Ingredients: -500 gr. of spaghetti -100 gr. of sea-urchin -1 clove of garlic -oil of best-quality -pepper and salt -parsley.

Directions: Cut the sea-urchin to half, clean and take the eggs. Put it in a terrine. Brown the garlic. In the meantime cook the spaghetti in a pot full of salting water, until al dente and then toss with the oil without garlic. Add the eggs of sea-urchin, chopped parsley, and pepper.
