Spaghetti to Norma

Makes 4 servings

Ingredients: -500 gr. of spaghetti -300 gr. of tomato sauce -1 kg. of black eggplants -150 gr. of grated salting ricotta cheese -100 gr. of ricotta cheese -oil of best-quality -8 entire leaves of basil -salt and pepper.

Directions: Cut to pieces the eggplants skinless, add salt and drain for an hour. Fry the eggplants. Place on a sheet of blotting-paper to eliminate the superfluous oil. In the meantime cook the spaghetti in salting water, until al dente. Toss the spaghetti cooked with ricotta cheese, the minced basil, the tomato sauce, the fried eggplants, grated salting ricotta cheese, garnish with the leaves of basil. Serve in table.
