Spaghetti "ca' nunnata" (fish newborn)

Makes 4 servings

Ingredients: -300 g. of fish newborn -400 g. of spaghetti -4 tomatoes -2 cloves of garlic -1/2 glass of wine -salt and pepper -oil of best-quality -parsley.

Directions: Boil the tomatoes, remove peel, seeds, and cut thinly. Brown the garlic and remove before adding the tomato: cook for 5 minutes. After some minutes add the fish, but do not stir and then, add wine. Evaporate and remove from heat. In the meantime cook in abundant salt-water the spaghetti: add a little water of the spaghetti in the gravy, salt and pepper. Drain the spaghetti and toss with the gravy and abundant chopped parsley.
