"Maccu"
Prep. Time: 60 minutes
Ingredients:
-1 kg of dried bean or the equivalent of fresh fat bean skinless -3 bunch of
beet root -2 large mature tomatoes or 500 gr. of peeled tomatoes -2 onions -oil
of best-quality -salt and pepper.
Directions:
Dip the bean into a pot full of water for 12 hours or take the fresh bean
skinless and cover with water. Cook for 1 hour. Drain and crush with a fork in
order to became a cream. In the meantime clean and boil the beet root. In the
meantime, add oil to the cream, salt and pepper and stir all. Put the cream of
bean into a soup-tureen and add the beet-root cut to pieces. Add oil or a fried
slowly of onion and tomato. Serve in a large dish. The maccu is optimal also
with the pasta.
