Linguine "To the Trapanese"

Makes 4 servings

Ingredients: -400 gr. of Linguine (kind of pasta) -300 gr. of  breaking up tomatoes -1 clove of garlic –some leaf of bay -2 spoons of oil of best-quality -250 gr. of mozzarella cheese -1 teaspoon of sugar –salt.

Directions: Cook in salting water the linguine, until al dente. Brown the garlic. Add the tomatoes, salt and a teaspoon of sugar. Cook over high heat, until done, and then toss with cooked spaghetti and add shredded mozzarella cheese.
