Pancake
of fruit

Ingredients:
-2 yolks -oil of best-quality -a lemon peel -a little of vanilla -a little of
salt –1/2 glass of white wine -3 spoons of flour 00 -500 gr. of fruits -seed
oil -icing sugar.
Directions:
Add the oil to the beaten yolks, the lemon peel, the vanilla, salt and wine.
Combine the flour in a container and the yolks, stirring for some minute with a
wood spoon. Let stand for two hours. In the meantime clean up the fruit, cut to
pieces and if it is necessary drain. Whip to a froth the white of eggs. Add the
mixture and the fruit. Heat abundant oil in a frying pan and dip a spoon of
mixture one by one, paying attention that the pancake keep off from the other.
Fry to high heat. Dry on a sheet of blotting-paper. Garnish with abundant icing
sugar and serve.
