Ingredients:
-500 gr. of grain -120 gr. of starch –150 cl of milk -200 gr. of sugar -200 gr.
of bitter chocolate –a lot of cherries in syrup.
To
make the “cuccia” with the ricotta cheese:
-1500 gr. of ricotta cheese.
Directions:
Put
the grain to soften into a pot full of water for three days. Drain. Melt the
starch in the cold milk adding the lemon rind. Put in a pot the milk with the
starch and cook over a lowest flame, stirring constantly. When it becomes creamy,
remove from the heat and add the grain, stirring all. Cool and add the chocolate.
Serve in table.
To
make the “cuccia” with the ricotta cheese:
Combine the ricotta cheese with the sugar. When it is creamy, add the grain and
the pieces of chocolate. Decorate with the cherries in syrup.
