Salad of Eggplants

Prep. Time: 40 Minutes      Difficulty: Medium

  Makes 4 servings

Ingredients: -2 eggplants -2 cloves of garlic -leaves of mint -1 onion -pepper and salt –rosemary -vinegar -oil of best-quality.

Directions: Boil the eggplants. Drain, until dried. In another pot, boil an onion, drain and cut to slices. Add to the eggplants in a salad-bowl. Flavoured with oil, leaves of mint, the rosemary, the pepper, the salt, the vinegar and add the chopped cloves of garlic. Serve after two hours.
