Salad of Artichokes
Prep. Time: 25 minutes
Ingredients:
-4 large artichokes -1 stalk of celery –juice of 2 lemons -50 gr. of parmesan
cheese to flakes or gruviera cheese cut to slices -oil of best-quality -salt and
pepper.
Directions:
Mix water and lemon juice in a container. Remove the stalk, hardest leaves and
the base of the artichokes. Cut the top of the artichokes, divide in two
vertical parts and using a knife to remove the thorns. Dip in the container with
lemon juice and water for 10 minutes. Drain and cut to julienne. In the meantime
cut thinnest the celery. Place the artichoke and the celery, in a salad-bowl and
add oil of best-quality, the juice of a lemon, salt and pepper, to the end add
the parmesan cheese to flakes. Stir and serve.
