Sicilian Roulades

Makes 4 servings

Ingredients: -400 gr. of meat of calf cut to thin slices all equal -50 gr. of pork fat -180 gr. of breadcrumbs -200 gr. of grated pecorino cheese -1 clove of garlic -2 white onions -a little of pine-peed –a little of raisins –oil of best-quality –salt and pepper –some leaves of laurel.   

Directions: On the slices of meat, spread the pork fat. Prepared the filling with the browned breadcrumbs, the pecorino cheese, the onion cut thinly, the raisins, the pine-peed, salt and pepper. Stuffed the slices of meat with the filling and roll up. Close and string every roulade and between everyone place a leaf of laurel and a slice of onion. Grease of oil and dredge of breadcrumbs. Cook in the coal, or in an oven or on the slab.
