Sardinians to the “Ghiotta”

Makes 4 servings

Ingredients: -600 gr. of Sardinians -100 gr. of flour -30 gr. of capers –1/2 onion -1 stalk of celery -2 carrots -100 gr. of green olives -1/2 glass of white wine -1 cup of tomato sauce -oil of best-quality -salt and pepper -basil.

Directions: Remove backbones Sardinians and open like a book. Dip in the flour and fry with heat oil, until done. Place on some sheets of blotting-paper in order to eliminate the superfluous oil. In the meantime, prepare the sauce according the directions of "Agghiotta of Sword Fish". Place on a serving platters the fish and pour sauce over.
