Roulades of Fish Sword

Makes 4 servings

Ingredients: -500 gr. of fish sword -25 gr. raisins -25 gr. of pine-peed -2 anchovies boneless -50 gr. of breadcrumbs -25 gr. of grated parmesan cheese -oil of best-quality -salt and pepper -parsley -1 clove of garlic -1 white onion -some leaves of bay.

Directions: Cut the fish sword to small and regular slices skinless and roll out. Set aside a little of fish sword (150 grams approximately) to make the filling: brown in a pot with oil, the garlic, the fish sword that you have set aside and the chopped parsley. Add to the browned fish sword, the anchovies, the raisin, the pine-peed, the breadcrumbs, the grated parmesan cheese, parsley salt and pepper. Cook for some minutes and remove from heat. Stuffed every single slices of fish sword and close every roulade, with a toothpick and between everyone place a leaf of laurel and a slice of onion. Grease of oil and dredge of breadcrumbs. Place in an heat-resistant pan, bake in a preheated oven for 20 minutes, until done.
