Rabbit in Bittersweet

Makes 4 servings

Ingredients: -1 rabbit -1 onion -1 stem of celery -200 gr. of greens olives -1 tablespoon of capers -30 gr. sultana raisins and pine-peed -1 cup of broth –flour -1 glass of vinegar -1 spoon of honey -oil of best-quality.

 

Directions: Cut the rabbit to pieces, clean and dray it and dip in flour. Brown the rabbit pieces, so that the inside is cooked and the outside it takes a beautiful gilded colour. Melt the honey in the vinegar and pour it over the rabbit. In another pot, prepare a gravy. Brown for 15 minutes the onion, the pieces of celery, the olives stoneless and the capers, the sultana raisins, the pine-peed, salt and pepper. Add the cup of broth and simmer in the same pot. Pour gravy over the pieces of rabbit and cook for others 15 minutes.
