Pie of Artichokes and Sardines

Prep. Time: 60 minutes      Difficulty: Medium

Makes 4 servings

Ingredients: -4 artichoke -1 Kg. of sardine -400 gr. of ricotta cheese -1 onion -1 lemon -1/2 glass of white wine -parsley -50 gr. of bread crumbs -salt and pepper -oil of best-quality.

Directions: Clean the artichokes, cutting the tip until eliminating the thorns, remove the hardest leaves, the stems and with a spoon the beard. Therefore cut to slices and soak it in abundant water with juice of lemon. Clean up the sardines, boneless and remove the head. Put into the sieve the ricotta cheese, add a little of salt, pepper and the chopped parsley. Brown an onion cut thinly ,with a little oil, therefore add the artichokes, and the glass of wine. Evaporate. Add two glasses of  salting water and pepper, than cover the pot and cook to low fire for twenty minutes. Remove from heat. Cool. Add the ricotta cheese.        Grease an heat-resistant pan and dredge of bread crumbs. Make a layer of sardines with ricotta cheese, the artichokes and oil. Repeat. Top with the sardines. Bake in a preheated oven      for 30 minutes.
