Mullets to the gravy of Mint

Makes 4 servings

Ingredients: -250 gr. of crumb –500 gr. of mullets -2 anchovy boneless -chopped parsley -1 leaf of mint -10 gr. of sugar -10 gr. of capers -salt and oil  -10 gr. of vinegar.

Directions: Soak the crumb in the vinegar therefore wring it out. Add the chopped parsley and mint. Put it in a mortar, add the capers and the anchovy and crush pouring, little by little, the oil. When it is ready, put in a terrine and add the sugar and spoon of vinegar and still oil. Wash, dip in the flour and fry the mullets. Remove from heat and put on a sheet of blotting-paper to eliminate the superfluous oil. Cool and seasoning with the gravy.
