"Little Octopus"

Prep. Time: 1 hour    Difficulty: High

Makes 4 servings

Ingredients: -1 kg. of small octopus -400 grams of peeled tomato -1/2 onion –1 clove of garlic –a lot of parsley -1/2 glass of white wine –oil of best-quality -salt and chilli pepper.

Directions: Clean, cut and drain the small octopus in a pot. Chop the onion and brown with the entire garlic. Add the breaking up tomatoes, salt and cook. After some minutes, add the octopus, the glass of wine and cook over a moderate flame stirring every so often. Add abundant parsley and little chilli pepper. Serve warm, flavoured with their gravy.
