Grouper to the “Maltolta

Prep. Time: 35 minutes     Difficulty: Medium

 

Makes 5 servings

Ingredients: -1500 g of grouper -1 eel of 300 gr. -6 tomatoes -1 onion -2 cloves of garlic -3 leaves of laurel -50 gr. of almonds –a lot of parsley -half glass of white wine -oil of best-quality –salt and pepper.

Directions: Saute chop onion in oil. Add the garlic and the breaking up tomatoes seedless. After five minutes add the grouper and the eel cut to small trance. Add salt and pepper and bathed with the wine with a few of water. Cook for twenty minutes over a moderate flame with the leaves of laurel. Shell and peel the almonds and simmer. Add to the grouper to half baking. When the fish is ready, remove from heat and place on a serving platters. In the meantime, continue to cook the gravy. Pour sauce over the grouper and serve with abundant chopped parsley.
