Chicken with Eggplants

Ingredients:
-1/2 kg. of Chicken -4 eggplants -500 gr. of tomatoes -200 gr. of ham cooked
-parsley -1 clove of garlic -salt and pepper -oil of best-quality -1/2 glass of
white wine.
Directions:
Clean and cut in pieces the eggplants, place in a container full of salt, to
lose their bitter. Clean the chicken, heat in order to remove the plumage and
dry before cut it in regular pieces. Brown the entire garlic. Remove the garlic
and fry the pieces of chicken. Flavoured with salt and pepper and bathed with
the wine. Evaporate. After some minutes add the tomatoes seedless and the
chopped ham cooked, a little broth. Brown the eggplants, for 10 minutes,
therefore add salt, pepper and parsley, until done. Add the eggplants and cook
for some minutes. Serve sprinkle of abundant chopped parsley.
