Breaded Fish Sword

Ingredients:
-500 of flour -30 gr. of leaven -50 gr. of lard -1kg. of Fish Sword -celery -500
gr. of tomato -100 gr. of greens olives -30 gr. of capers -an onion -2 carrot
-1/2 glass of white wine -300 gr. of parmesan cheese -50 gr. of breadcrumbs -oil
of best-quality -a lot of parsley -salt and pepper.
Procedure:
Combine flour, a lot of salt, yeast melted in lukewarm water and 40 gr. of lard.
Roll out in two layers of three millimetre of thickness. One of the two layers
is larger than other. Breaking up the sword fish and cook, according the
directions of the "Agghiotta of Fish Sword". Add the grated parmesan
cheese and the breadcrumbs. Grease with butter an heat-resistant pan and make a
layer of dough and pour the fish over. Cover with the other sheet of dough and
close the edges watertight. Make some holes with a fork and spread with
remaining lord. Bake in a preheated 240° oven until browned.
