Angler To The Citruses

Makes 4 servings

Ingredients: -4 slices of Angler -juice of 2 oranges and of 1 lemon -1 teaspoon of chopped parsley -oil -saffron -dry white wine -5 spoons of tomato paste.      

Directions: In a large frying pan, pour the juice of the oranges and the lemon, the chopped parsley, 3 spoons of oil of best-quality, half glass of wine, and salt. Cook, until boiled. Place the fish in a single layer, add few of saffron diluted in 2 spoons of wine, and cook over a low flame, on both side, until done and then remove and place on a serving platters. In the meantime, simmer the gravy, until very thick. Pour the gravy over the fish and garnish with the rind of lemon and orange, cut to julienne. Cook the tomato paste, put in a gravy boat and serve.
