“Aggrassatu”

Makes 4 servings

Ingredients: -600 gr. of Girello (kind of meat) -3 white onions -3 canned tomatoes -1 glass of white wine -salt and pepper -oil of best-quality.

Directions: Cut thinly the onions and brown it in a pot with a lot of oil together to the meat tied up and bathed with the wine. Evaporate. Add the canned tomatoes diced, salt and pepper, and cover the pot. Cook over to medium fire for an half-past hour and add water every so often. When the meat is cooked, take it off to the pot and put the gravy into the sieve. Cut the meat to slices and put it into an heat-resistant pan and pour gravy over, that could be used like seasoning to pasta.
