“Agghiotta” of Stockfish

Makes 4 servings

Ingredients: -1Kg of Stockfish softened -1 onion -3 cloves of garlic -1 glass of white wine -500 gr. of canned tomatoes -4 potatoes -300 gr. of green olives stoneless -15 gr. of capers -10 gr. of pine-seed -15 gr. of raisins -a lot of celery -1 carrot -a few of parsley –olive oil -salt and pepper to taste.

Directions: Place the fish into a container with water in order to became soft. Heat the oil in a pot and brown the onion cut thinly, and when it is ready, add the crushed garlic. Put the Stockfish, cut in trance, in the pot and cook for five minutes to medium fire: bath it with the wine. Add the breaking up tomatoes and the potatoes diced, the olives stoneless, the raisins, the chopped pine-peed, the carrots and the celery. Add salt and pepper, cook for 50 minutes with the pot cover. Dredge of parsley and serving platters.
