Salad of Sea
Prep. Time: 45 minutes
Ingredients:
-300 gr. of octopus -400 gr. of squids –700 gr. of lobsters -400 gr. of
mussels -300 gr. of clams -2 lemons -oil of best-quality –salt and pepper -a
lot of parsley -vinegar.
Directions:
Boil the octopus and the squids separately in abundant salting water. To make
the octopus following the directions of “salad
of octopus”. Drain and cut the octopus in pieces and the squids to
rings. In another pot, boil the lobsters with a little of vinegar, in order to,
not become black. Drain. Steam until all the clams and mussels, have opened.
Remove from heat, and set aside their broth. Remove their shell. Mix in a
salad-bowl octopus, squids, mussel, clam and lobsters flavouring with oil, lemon
juice, salt, pepper and add two tablespoons of broth of mussels and clams. Add
abundant chopped parsley. Cool before serving.
