Salad of lobster with mint
Prep. Time: 65 minutes
Ingredients:
-800 gr. of lobster -1 spoon of vinegar -1 stalk of celery -3 lemons –1/2 cup
of olive oil -salt and pepper -a lot of parsley (only the leaves) -2 entire
leaves of mint.
Directions:
Clean the lobster and dip in a container full of cold salt-water for 30 minutes.
Put a pot full of water over heat and add salt and vinegar. Dip the lobster in
the pot and simmer for some minutes, until done. Place in a salad-bowl. Cool,
skinless and diced. Wash and clean up the celery, place in water with lemon
juice for half hour. In the meantime, flavour the lobsters with oil, salt and
pepper. Add the diced celery, and the lemons juice and stir. Cover the
salad-bowl and store in refrigerator for half hour. Before serving, add the
chopped parsley and the entire leaves of mint.
