Meal-ball of Ricotta cheese

  Makes 4 servings

Ingredients: -500 gr. of potatoes -3 yolks -70 gr. of grated parmesan cheese -200 gr. of ricotta cheese -salt and pepper –breadcrumbs -oil of best-quality.  

Directions: Boil the potatoes skinless and with a fork make a potato purée. Add the beaten eggs, the grated parmesan cheese, salt, pepper and breadcrumbs, work until smooth. With the hands, make round and regular meat-ball. Dip in breaking up ricotta cheese and in the breadcrumbs and set aside for some minutes before frying. Fry, until browned. Remove from heat and place on a sheet of blotting paper, to eliminate the superfluous oil. Serve in a serving platters.
